The best sounds in the world, part 1

One thing I miss about working in kitchens is the sound of the dinner rush. I liked the bang and clatter of the line, hearing Chef as he called out the orders, and – most of all- hearing a table’s order make its way through the kitchen.

As diners progressed through a multi-course meal, each station in the kitchen would receive its ticket on old-school printers. You could hear the printers as they spat out orders in garde manger for the amuse bouche and cold starters, the line for hot starters and mains, and then in pastry for the desserts. It was symphonic, and I never got tired of hearing it.

An occasion for dancing

A post made up entirely of questions

Have you seen these McDonald’s commercials for the new Angus Burger, featuring a bakery-style bun?

What, exactly, is a bakery-style bun? Is it a bun that’s made somewhere other than a bakery? Does this mean that there is a particular style of bun that is made at bakeries? If so, why don’t I know about this?

I mean, why bother to call it a bakery-style bun? Why not just call it a bun?

Multitasking

I have banana bread in the oven. In the meantime, I’m eating Cheerios and reading Michael Pollan’s “In Defense of Food“. So far, it’s brilliant. I really hope I finish it soon, because it’s due back to the library tomorrow and I’m tired of renting, as opposed to borrowing, books. This is what happens when you borrow five books at one time and realize that you have no way of reading them all in three weeks.

Always be prepared

I’m off to a full-day workshop tomorrow, and I have no idea what the food situation will be.  Will there be coffee?  Will there be munchies?  Will I have time to grab lunch?  Will I starve to death in a room full of strangers?

But don’t you worry!  My bag is stuffed full of granola bars, apples and lollipops.  You know, just the basics.
